Yummy Recipes!
Over the years I have collected so many wonderful - delicious recipes I thought I would share some of them with you! Some are simple and fast - Others are a bit more complicated but all are delectable!!
They will be grouped for now starting with Desserts - Cakes - Cookies - Other! Later in the year I will be adding some scrumptious Christmas Recipes so check back often!!!
There will also be some Tips and Suggestions to make cooking and baking easier!!
So get your coffee or tea brewed - Lets bake something!!
Desserts
Mocha Log Roll
Oven 350* Bake 15 min.
Whip 6 large eggs at high speed in your large mixer bowl
Add 2 tsp. of your favourite flavour-lemon etc.
Gradually add 1 cup of sugar - Then whip for 8 minutes.
Fold in 1 cup flour mixed with 1tsp baking powder.
Pour batter into a foil lined cookie sheet - After baking IMMEDIATELY loosen edges from foil and sprinkle with icing sugar. Then roll up in foil and let cool completely. Roll up on the long side
FILLING:
Mix 2tbsp. Instant coffee and a few drops of boiling water to make a thin paste-make sure the coffee is totally dissolved! Let cool and drizzle into whipping cream while it is beating!!
Whip 500 ml of Whipping Cream - 1/2 tsp rum flavouring - 1/4cup icing sugar.
Unroll the cake and fill with 1/2 of the cream! Spread the other half on the outside of the Roll and sprinkle with chocolate shavings!
NOTE:
This cake may also be used for making slices-----After baking cut the sheet into 3 pieces ---Top each layer with fresh sliced strawberries and whipping cream and stack one layer on top of the other-- then top with whipping cream and more berries!!!
Strawberry Heaven
Place 2cup strawberries sliced into a bowl - sprinkle with 1/2 cup sugar - drizzle with 1/4cup of any Orange Liquer(Grand Manier preferred) or a good Brandy. Let stand!
Cream 1/2cup Cream Cheese - 1/2cup Ricotta or Quark - 1tspVanilla flavouring - 1/2cup Honey! Beat well!!
Whip 1cup heavy cream and fold into Cheese mixture!
Place 1/2cup each Strawberries into Dessert Dishes - Top with Cream mixture and Chocolate shavings( I prefer Bitter Sweet Bakers Chocolate)
Rhubarb Crisp
Bake 375* 45-50min.
In a large bowl --1 1/2cup Flour - 1/2cup brown sugar - 1tsp cinnamon - 1/2tsp nutmeg! Add 12 tbsp butter - Cut in with a pastry blender of knife - Add 1/2cup Rolled Oats!
Wash and clean rhubarb (do not peel the rhubarb) cut into 1 inch(5cm) pieces - toss with 1/2cup sugar - 1/2cup constarch - Zest of one orange - juice of 1/2 orange - 1tsp Vanilla.
Grease a large baking dish fill with rhubarb mixture and top with flour mixture!
Top each single serving with cinnamon and or Vanilla Ice Cream or Whipping Cream
NOTE:
Cut more Rhubarb into 1 inch pieces and freeze for winter enjoyment!!
Yummy Chewie Brownies
Oven 350* Bake 25-30minutes
Melt 8oz Bakers Chocolate and 8oz butter(1/2lbs) in Micro Wave or double boiler.
In large Mixing bowl - Beat 5large eggs and 3cups sugar - beat well - add 2tbsp vanilla extract and beat more!
Add melted chocolate and butter mixture while beating constantly - Then stir in 2 1/3 cups flour.
Pour into greased oblong (large glass) pyrex baking dish and bake!
Cakes
Chocolate Cake
Oven 350* Bake 20 minutes - Rotate Pan bake another 15-20 minutes.
Butter Oblong Pyrex Pan and dust with Cocoa
1 cup Cocoa or 9squares of Bakers chocolate melted - add 1/2 cup very strong coffee and 1 cup milk -- stir togethers.
Combine 2 3/4 cups flour - pinch of salt - 1 1/2 tsp baking soda.
In large mixing bowl - Cream 1 cup Butter - add 2 1/2cups sugar - 2tsp rum flavouring - 1 tbsp Vanilla flavouring and cream till fluffy - under steady beating add 4 large eggs - one at a time.
Then add cocoa mixture half and half at a time with the dry ingredients.
Pour into prepared Pan and bake.
Top with Frosting
Cream 1/2 cup butter till fluffy - stir in 1/2 cup cocoa - 2 1/2 cups Icing Sugar - 2 tsp Vanilla extract - 1/4 cup milk. Beat till fluffy and spread on cooled cake.
Cookies
Chocolate Peanut Butter
Oven 350* 20 minutes
In large bowl - Cream 1/4lb of Butter - add 1/2 cup Sugar and 1/2 cup brown Sugar - add 3/4 cup Peanut Butter - 1 tsp Vanilla - 1 large egg. Beat till fluffy.
Stir together 1 cup Flour and 3/4 tsp baking soda - Stir into mixture - Then add 6oz (or 3 squares) chopped Bakers chocolate and fold in.
Drop by Serving Spoon full onto Cookie sheet - will make Large cookie. If you want to make smaller cookies use a smaller spoon and reduce baking time to 12-15 minutes.
My Butter Tarts
Oven 375* Bake 30 minutes
Dough - 4cups Flour - 2cups Crisco (or other vegetable shortening) - 8 tbsp cold water - 1/4tsp salt - 1/4 c sugar. Cut with pastry blender or mix with Food Processor. Do not overwork the dough.
Roll out the dough and cut into round shapes -- Place dough all the way down into Muffing Tins.
Filling - In Mixer Bowl - Beat 2 eggs well - add 2cups brown sugar - 2tbsp lemon juice - 2tsp Vanilla Flavouring - Beat well. Stir in 1/2cup melted Butter - 1/2cup Currants and 1 cup chopped Pecans.
Fill Tart Shells 3/4 full and bake.
Other
Orange Almond Biscotti
1 ¾ cups all purpose flour 2 tsp baking powder ¾ cup unblanched almond sliced or silvered 2 eggs ¾ cup white suger 1/3 cup melted butter ½ tsp almond extract ½ tsp orange extract 1 ½ tsp orange zest 1 egg white, slightly beaten
Combine flour with baking powder & almonds. In another bowl beat eggs & add sugar, melted butter & extracts.
Combine both mixes to form a sticky dough. On a lightly floured board form dough into a smooth ball then divide in two. Form each ball into a 12" log and place 3" apart on baking sheet lined with parchment paper. Brush each log with egg white & sprinkle lightly with suger. Bake at 350 for 20 minutes. Allow to cool for 5 minutes. Then transfer to cutting board. Slice diagonally into ¾" slices, return upright slices to baking sheet, return to oven, baking an additional 20 minutes until golden brown. Cool on rack, store in airtight container for up to two weeks
