Growing Organic Spinach
Originating from Persia, this ancient variety was brought to North America from Italy at the turn of the century. It will grow in almost any type of soil. This unusual type of spinach will grow to a height of three or four feet and is very hardy. To plant simply spread the seeds on top of the soil in early spring and as soon as the conditions are right, it will germinate and take root. The taste of this spinach is very mild and the texture is tender when young. As the plant ages, simply de-vein the leaves to retain a pleasant texture.
Spinach is best eaten raw in salads and sandwiches. As cooking all varieties of spinach produces oxalic acid, which may cause calcium lose in the body. If you choose to cook spinach, it is still very flavorful but an additional calcium rich food should be added to the menu. Example, sprinkle with toasted sesame seeds or a dish of yogurt, cheese etc.
Leave one plant to grow to maturity and at the end of the season you will have an abundance of seed for planting the next year.

The plant is very hardy and grows well without any pesticides or fertilizers. We have not had any bug problems. It is best eaten cooked as it is a little tough for raw salads. The great part of this amazing plant is it is normally the first green plant that you can actually eat out of the garden. It is suggested you pick the leaves off from the sides once it starts to grow in size and let the centre leaf keep on growing. Once you have had your fill over the weeks/month and the plant starts to appear a little tough then you can go on and plant something else in the same spot for summer if you wish. We have even planted it the year before and have also thrown the seeds on the snow as it melts with good results. If you can let some go to seed you can continue the legend on for yourself.
