MATAMIS

Sans Rival (Meringue crusted cashew nut cake)

Place in a large mixing Bowl the following then mix until stiff & firm :

12 egg whites

1 tsp. cream of tartar

2 cups sugar (superfine), pour into egg whites in parts

Line the 2 or more (if making a smaller but thicker Sans rival with more layers) small baking sheets with baking parchment paper or aluminum foil & fold corners to form a square box to accommodate the meringe mixture. Use spatula to even out the top. Bake at 250 degrees Fahrenheit until brown.

For the icing:

Boil 1 cup water & 2 cups sugar in medium heat until thickened

slowly add syrup to the beaten 12 egg yolks- Set aside to cool in frig. or freezer

gradually add 2 x 454g. blocks of creamed butter until smooth

-add roasted coarsely chopped Cashew nuts to sprinkle on top of icing during cake assembly-

ASSEMBLING PROCEDURE:

Assemble 1st layer of the cooked meringue, layered with half the icing mixture (cold not warm), then sprinkle with the cashew nuts on top, then place the second meringue layer on top then pour on the other half of the icing mixture & sprinkle cashew nuts again. Place in the fridge or freezer to harden. Simply delicious! "SANS RIVAL"!- in French ("No Comparison" -in English)!!

 

Leche Flan (Egg Custard)

(Makes approximately 6-8 molds)

Place in a large Bowl the following:

15 whole Eggs or just yolks

4 cans Evaporated Milk

3 cans Condensed Milk

1 tsp. rind of lemon or lime

For the caramel:

1 cup Brown Sugar & 1/2 cup water

 

MIXING PROCEDURE:

Crack & place eggs in a large bowl, Add the milks, Mix slowly for 20 minutes until smooth. Strain, set aside.

Prepare the caramel by using brown sugar mixed with little sugar poured on each mold to cook over fire until the sugar becomes caramelized & sticky to coat the bottom of each mold .

Pour in the egg/milk mixture into each mold. Do not stir.

COOKING METHOD:

Cover with foil, Steam in LOW HEAT for one hour. Cooking in low heat makes the texture fine & delicate. Cooking in high heat will result in rough & firm texture.

Insert toothpick to test for doneness.


Banana Cake

Mix the following:

1/2 of 1lb. Butter block

2 cups sugar

4 eggs

4 Bananas

4 cups flour

2 tsp. Baking Soda

5 tsp. Baking powder

1 tsp. Cinnamon powder

optional: Raisin or roasted cashew

BAKING PROCEDURE:

Pour mixture on the baking pan. Bake at 350 degrees Fahrenheit for 35 minutes more or less, insert toothpick to check for doneness.
