1L 18% Milk

1L 10% Milk

CaCl 3/4tsp

Rennet 3/4tsp

White Penicillin culture.

MA4002 Meso culture

 

Start temp is at 31c/88F

12:20 preheat milk and bring up to 31c. Add culture made the night before and the CaCl. Current temp 31.1c Bath at 32.5c.

13:30 30.7c, bath at 33.6c. Add rennet.

15:00 30.8c, Cut the curds.

After 15 min the curds will have settled and start pouring out the excess and start ladling into a mould.

Once its full then wait till it drains to add more, unless you have a nice tall tube.

After its down to the brim, then flip and leave over night to drain.
