4L batch Homo 3.5% milk.
Bought some old English Stilton for culture, creamed with milk and added to starter MA4002 with 250ml 35% whipping cream the previous night.


Let drain in colander for an hour then transfer to molds, left to drain overnight.
Leaning towers of Stilton ;) added some weight and got lopsided.

Nov 27.
Starting to sweat.
Dec. 25
Cut them open to see what's up, closed them up again and let ripen more.

Jan 17 07.
Took a look at them, hmm, the closed container has made them like camembert and gone soft, tastes like stilton, however its a hybrid LOL. tastes very nice so definitely a keeper, just make sure it can breath and has air circulation.
