Smoky Corn Chowder

.25 cup Butter
1 small onion
2 tablespoon VE Red Bell Pepper
.25 teaspoon VE Chipotle Chili
.25 cup flaked almonds
2 cup chicken broth
1 cup evaporated skim milk
2 cup corn
1 tablespoon VE Chives
3 twist VE Chili Garlic Sea Salt

1. Melt butter in multi-purpose pot over medium high heat. 2. Add chopped onion, VE Red Bell Pepper and VE Chipotle Chili Seasoning. Cook for 8 minutes or until onions are softened. 3. Sprinkle flour over top and stir with a wooden spoon for 1 minute. 4. Slowly add chicken stock and evaporated milk. Bring mixture to a simmer, whisking until smooth. 5. Stir in corn and VE Chives. Season to taste with VE Chili Garlic Sea Salt. Serve immediately.
