2 cup cornmeal
.25 teaspoon baking soda
2 teaspoon VE Baking Powder
1 tablespoon VE Cajun Seasoning
2 teaspoon VE Herb & Garlic Dip Mix
2 single egg; beaten
2 cup buttermilk
2 tablespoon Butter; melted
1. Preheat oven to 425° F (220° C) and generously butter baking pan. 2. Combine first five ingredients. In a separate bowl, mix eggs, buttermilk and melted butter. 3. Add wet ingredients to dry and stir until just combined (do not over mix). Pour into prepared pan and bake 25 – 35 minutes, or until edges are lightly browned and beginning to pull away from pan edge. Tip – Reduce fat by baking cornbread in a medium Eclipse® coated frying pan.
