Lemon Dilly Chicken

2 tablespoon olive oil
6 single skinless boneless chicken breast
1 cup chicken broth
1 tablespoon lemon juice
1 teaspoon VE Lemon Dilly Dip Mix
3 twist VE Sea Salt
3 twist VE Pepper
1 tablespoon VE 3 Onion Dip Mix

1. Heat olive oil in Eclipse® coated frying pan. Cook chicken breasts over medium heat 3 minutes per side, or until golden brown.

2.Whisk together chicken stock, lemon juice and VE Lemon Dilly Dip Mix.

3. Pour over chicken. Heat to boiling, then immediately reduce heat to a simmer and cook for 10 – 15 minutes or until thickest part of the chicken is no longer pink.

4. Transfer chicken to serving plate. Bring sauce to a boil for 2 minutes or until reduced by half. Season to taste with VE Sea Salt & VE Pepper. Add VE 3 Onion Dip Mix and pour over chicken breasts.

Serving Suggestions:

Serve with rice and steamed green beans or broccoli.
