Pesto Chicken Pinwheels

2 tablespoon VE Pesto
3 tablespoon hot water
4 oz feta cheese; softened
t twist VE Pepper
12 oz chicken breast
Preheat oven to 350 F. Spray 8" pan with cooking oil. Combine Pesto Seasoning and Hot Water. Let Stand 5 minutes. Add Feta Cheese and pepper. Blend. Place each chicken breast portion between 2 pieces of waxed paper and pound with a mallet to an even 1/4" thickness. Remove waxed paper from rough side and spread each portion with 2 Tbsp. of cheese mixture. Remove chicken from paper and roll up jellyroll style, securing with toothpicks. Place in prepared pan, seam side down. Bake 25 - 35 minutes or until juices run clear when meat is pricked with a fork. Let stand 5 minutes then slice and arrange on a plate. Spoon any remaining cooking liquid over the chicken.
*This is a very attractive dish that can also be prepared ahead of time and served cold for a summer buffet.
