1 tablespoon Butter
2 single skinless boneless chicken breast
.5 cup orange juice
2 tablespoon VE Poco Picante Salsa; prepared
2 teaspoon VE Pesto Herb Mix
1. Melt butter in small EclipseŽ coated frying pan over medium heat. When butter is bubbling, add chicken breasts and cook 4 minutes per side until golden brown.
2. Pour in orange juice, VE Salsa and VE Pesto Herb Mix and simmer for 10 minutes, until chicken is fully cooked.
