Spanich Oven Chicken

4 single chicken breast
1 tablespoon VE Spanish Seasoning
6 medium potato; wedges
1 large red bell pepper; strips
1 large green pepper; sliced
1 single lemon; we
3 cup chicken broth
1 tablespoon VE Foccacia
2 twist VE Sea Salt
2 twist VE Pepper
1. Preheat oven to 375° F (190°C).
2. Rub chicken pieces with VE Spanish Seasoning. Place chicken in large, shallow roasting pan or 9” x 13” (23 x 33 cm), skin side up.
3. Arrange potatoes, onions and red and green pepper strips between pieces of chicken. Add lemon wedges and olives.
4. Add stock or water and wine to a depth of 1/2” (1.25 cm).
5. Sprinkle VE Focaccia Bread Mix over casserole. Add VE Sea Salt and VE Black Pepper to taste. Roast for 1 hour, basting occasionally.
6. Serve with a nice loaf of bread for sopping up the wonderful juices.
