Dried Fruites Poached in Cinnamon Syrup

2 cup water
.5 cup Sugar
.25 cup honey
.5 teaspoon VE Cinnamon
2 tablespoon lemon juice
.25 teaspoon VE Vanilla
1.5 cup dried apricots
1 cup pitted prunes
1. Combine water, sugar, honey and VE Cinnamon in large multi-purpose pot. Bring to a boil. Cook gently for 5 minutes.
2. Add lemon juice, VE Vanilla Extract and apricots and simmer for 10 minutes.
3. Add prunes and continue cooking an additional 10 to 15 minutes or until fruit is tender. 4. Serve warm on its own or with yogurt or vanilla ice cream.
