Poached Tarragon Lemon Halibut

2 cup water
1 half lemon; juiced
2 tablespoon VE Dijon Tarragon Dip Mix
4 single halibut fillets
2 teaspoon VE Seafood & Fish Seasoning
3 twist VE Sea Salt
3 twist VE Pepper

1. Combine water, lemon juice and VE Dijon Tarragon Dip Mix in a sauce pan and bring to a boil.

2. Season halibut fillets with VE Seafood & Fish Seasoning, VE Sea Salt and VE Pepper. Reduce temperature in pan so liquid is barely simmering (small bubbles should just be breaking the surface).

3. Gently place halibut in liquid, cover sauce pan and simmerfor 8 – 12 minutes, depending on thickness of fillets. Fish is done when it flakes easily with a fork. Remove with a slotted spoon and serve with a pat of Dijon Tarragon Lemon Butter.
