Black Bean Chili with Guacamole

1 tablespoon vegetable oil
2 single onion; chopped
2 teaspoon VE Minced Garlic
2 single carrot; chopped
2 tablespoon VE Chili Seasoning
1/8 teaspoon VE Chipotle Chili
.5 teaspoon VE Chili Garlic Sea Salt
56 oz diced tomatoes
38 ox black beans; rinsed, drained
.25 cup VE Guacamole; prepared

1. In large multi-purpose pot, heat vegetable oil over medium heat. 2. Add onions, garlic, carrots, VE Chili Seasoning and VE Chipotle Chili. Stir occasionally for 5 minutes or until onions are softened. 3. Add remaining ingredients. Cover and simmer for 40 minutes. 4. Serve with a dollop of prepared VE Guacamole Dip and tortilla chips.
