Greek Spinach Melts

1 package frozen spinach; thawed and drained
.75 cup sour cream
.25 cup mayonnaise
.5 cup red pepper; diced
1 cup feta cheese; crumbled
1 tablespoon VE Lemon Dilly Dip Mix
2 tablespoon VE 3 Onion Dip Mix
1 tablespoon VE Poco Picante Salsa
2 teaspoon VE Greek Dressing Mix

Mix all ingredients. Put 1 tbsp mixture on a mini pita pocket. Bake 5-8 minutes at 350º. Also try this mixture on grilled chicken breasts for a luscious change.
