Grilled Vegetable Sandwich

2 tablespoon olive oil
1 teaspoon VE Balsamic Vinegar
2 teaspoon VE Minced Garlic
.5 teaspoon VE Vegetable Seasoning
1 small eggplant; slices
1 large portobello mushroom; sliced
8 slices sourdough bread
1 large yellow pepper; quartered
1 large red bell pepper; quartered
8 large spinach leaf
1 large tomato; sliced
4 single red onion; sliced

Preheat grill. Combine oil, vinegar, garlic & VEGETABLE SEASONING in a small bowl. Lightly brush eggplant and mushroom slices and one side of the bread with the oil mixture. Arrange vegetables on the grill rack and grill till tender, turning once (5-6 min. each side). Place bread on grill for the last 5 minutes to toast each side. Place spinach on the oiled side of the bread; top with tomato slices & grilled vegetables. Place remaining bread pieces on top of vegetables. Make 4 sandwiches.
