Pork Pitas with Fresh Vegetables

1 lb pork loin or chicken breast
2 tablespoon olive oil
2 tablespoon lemon juice
1 tablespoon dijon mustard
1 tablespoon VE Greek Dressing Mix
1 single VE Tzaziki Dip; prepared
4 single whole wheat pitas
1 cup lettuce; shredded
1 large tomato

1. Slice pork or chicken into thin strips and mix with olive oil, lemon juice, mustard and VE Greek Seasoning. Refrigerate and marinate for a minimum of 1 hour, or overnight.

2. Heat an EclipseŽ coated frying pan to medium high. Remove pork or chicken from marinade and stir-fry 3 - 5 minutes, or until fully cooked.

3. Spread prepared VE Tzaziki Dip generously inside pita and add a serving of pork or chicken, lettuce and tomato.

4. Serve warm or wrap in plastic, refrigerate and eat on the go.
