Warm Egg & Italian Bacon Sandwhich

2 single baguettes
3 tablespoon VE Pesto; prepared
8 slices cheese of your choice
16 slices bacon
8 single egg; poached
8 tablespoon VE Bruschetta; prepared
8 teaspoon parmesan; grated
1. Slice baguette or use plain bread. Spread pesto evenly among the baguette. 2. Bake in 350 oven for 8 minutes or until heated through. 3. Layer sandwich in order of ingredients appear in list. 4. Broil in oven for 3 minutes.
Tip: To poach eggs, bring water to a simmer in a shallow sacuepan. Add 1 tablespoon of vinegar to water. Working with 1 egg at a time, crack egg open into a small cup. Gently, but quickly pour the egg into the simmering water. Simmer for 3 minutes or until white is firm but the yolk is still soft. Remove from water with slotted spoon and place on paper towel to drain.
