Simmered Cajun BBQ Sauce

2 teaspoon vegetable oil
1 medium onion; diced
2 tablespoon VE Louisian Hot & Spicy Dip Mix
2 teaspoon VE Barbecue Seasoning
14 oz diced tomatoes
2 tablespoon vinegar
3 tablespoon brown sugar
1. Heat a small multi-purpose pot to medium; add vegetable oil and sauté onion for about 3 minutes.
2. Stir in VE Louisiana Hot & Spicy Dip Mix and VE Barbecue Seasoning. Heat 1 minute.
3. Add diced tomatoes, vinegar and brown sugar; stir well. Reduce heat to low and simmer for 30 minutes or until sauce is reduced by about half.
4. Transfer to blender and purée until smooth. Cool and use immediately or keep refrigerated for 1 week.
Tip: Makes an excellent dip for Roasted Red Oven Fries.
