Cuban Beans & Rice

2 teaspoon vegetable oil
1 large onion; chopped
1 single garlic; crushed
1 tablespoon VE Cuban Seasoning
1 teaspoon VE Fajita Seasoning
1 single red bell pepper; diced
1 single green pepper; diced
1 ts worcestershire sauce
19 oz canned diced tomatoes; including juice
2 cups rice; cooked
19 oz black beans; drained, rinsed
.66 cup grated cheddar cheese
1 tablespoon cilantro (fresh); chopped
1 single VE Salt
1 single VE Pepper
1. In large saucepan, heat oil over medium heat. Add onion, garlic and diced peppers. Cook for 5 minutes or until onions are translucent. 2. Stir in VE Cuban and VE Fajita Seasoning, and continue to cook for 1 minute. 3. Add tomatoes, beans, rice, stir in Worcestershire sauce. Bring to a boil, reduce heat and simmer for 20 minutes or until most of the liquid has evaporated. 4. Season to taste with VE Sea Salt and VE Pepper. 5. Garnish with cheddar cheese and cilantro.
